🌶️ Chipotle Chicken Fajitas – Meal Prep Style
This chicken fajita recipe is one of my go-to meal preps — it’s smoky, juicy, and packed with colorful veggies. The chipotle marinade brings the heat and depth, while a quick sauté keeps the peppers crisp and vibrant. Whether you’re feeding the family or stacking containers for the week, this recipe delivers big flavor with minimal effort.
🛒 Ingredients:
For the Fajitas:
2 yellow bell peppers
2 orange bell peppers
2 green bell peppers
2 red bell peppers
2 yellow or white onions
2–3 lbs chicken breasts
For the Marinade:
1 (8 oz) jar of chipotles in adobo
1 tbsp avocado oil
2 tbsp Knorr chicken bouillon
Juice of 2 limes
2 tbsp pineapple or orange juice
2 tsp oregano
2 tsp cumin
2 tsp chili powder
2 tsp smoked paprika
2 tsp garlic powder
2 tsp onion powder
Salt to taste
🔥 Instructions:
Blend the Marinade:
Add all marinade ingredients to a blender and blend until smooth.
Prep the Chicken:
Butterfly your chicken breasts and slice them into strips. Add the chicken and marinade to a large zip-top bag. Seal and refrigerate for at least 1 hour (or overnight for deeper flavor).
Slice the Veggies:
Cut all the bell peppers and onions into thin strips.
Sauté the Veggies:
Heat a bit of oil in a large skillet over medium-high heat. Add the peppers and onions and sauté until they’re slightly softened but still crisp (about 5–7 minutes). Remove from the pan and set aside.
Cook the Chicken:
In the same pan, add the marinated chicken strips. Let them sear without stirring for a few minutes to get a nice crust, then flip and cook the other side. Don’t overcrowd the pan—cook in batches if needed.
Combine and Finish:
Once the chicken is mostly cooked, add the sautéed peppers and onions back into the pan. Mix everything together and let it simmer for another 2–3 minutes until the chicken is fully cooked and coated.
Serve:
Plate it up with rice, tortillas, or just eat it straight out of the bowl (no judgment). Perfect for meal prep or family dinner.
