Looking for a quick, no-fuss meal that’s perfect for busy weeks and still loaded with nutrients? This Chicken Sausage & Veggie Bowl is a 7-ingredient powerhouse made with roasted potatoes, squash, zucchini, and juicy chicken sausage – all air-fried for max crisp and minimal cleanup.
Whether you’re meal prepping for the week or whipping up dinner on the fly, this is one of my go-to recipes when I’m low on time but still want to eat good.
INGREDIENTS
Protein
• 2 packs chicken sausage (about 24–28 oz total), sliced
Veggies
• 2 yellow squash, sliced
• 2 zucchini, sliced
• 4 medium potatoes, diced
• 1 cup mushrooms, roughly chopped
Other
• 2–3 tbsp olive oil
• Garlic salt (to taste)
• Italian seasoning (go heavy—trust me!)
INSTRUCTIONS
1. Prep the Produce:
Wash and slice your yellow squash, zucchini, and mushrooms. Dice the potatoes into small chunks for even cooking. Toss everything into a large bowl.
2. Slice the Sausage:
Chop your chicken sausage into thick slices (think: thick pepperoni style). Add to the veggie mix.
3. Season Generously:
Drizzle olive oil over everything and season with garlic salt and a generous amount of Italian seasoning. Mix thoroughly to coat.
4. Air Fry Everything:
Preheat your air fryer to 375°F. Line trays with parchment paper and layer in the seasoned potatoes, veggies, and sausage. Air fry for 20–25 minutes or until golden and crisp, flipping once halfway through.
5. Serve or Store:
Scoop into bowls for now or meal prep containers for later. Enjoy warm or reheat throughout the week!
PRO TIPS
Chop potatoes small so they cook evenly with the rest.
Want extra crisp? Air fry the potatoes separately for 5–10 minutes first.
Add hot sauce or balsamic glaze for a flavor twist.
No air fryer? Bake at 425°F for 30–35 minutes.
